There is an old DOS utility called PRN2FILE.COM by Tom Kihlken that will take output headed for the Parallel ports and convert it to a text file.
You could probably find it on ZDNET, or I can email you a copy.

LPT1 capture to a file.
Hello,
I was wondering if someone could point me in the right direction
about capturing/redirecting LPT1 to a file. I have an old DOS
application that only prints to a specific HP printer, needless
to say HP no longer supports the ink cartriges and paper for it.
I desperatly need know how to redirect what ever data shows up
at the printer port to a file. Any help would be greatly
appreciated. I have even considered using another computer to
emulate the HP printer by linking the two parallel ports to each
other.
